I find that as you grow older, your taste buds change a lot. For example, a few years ago, sushi was the furthest thing from my mind. Now, I can’t get enough. I haven’t met a spider roll I didn’t like. I could sit all day and gorge on sushi.
It’s either maturity or changing taste buds.
The same can be said for tomatoes. They were gross when I was a kid. Who would ever put them on a burger or sandwich? And what about those weirdos that actually eat tomato sandwiches? Just big chunks of tomato with a little mayo slathered on top with bread. Who does that?!
And yet, I’m now in love with tomatoes. I put them in salads, in pasta, on burgers, in salsa. I can’t get enough. Even crazier? I eat them in slices. Fried. With breading.
Weird but tasty. I can’t get enough of them. I want to marry a tomato.
We could be so happy together.
Fried Green Tomatoes
1 green tomato
1 cup panko breadcrumbs
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. chives
1 cup flour
2 eggs, whisked
oil for frying
Cut your tomato into thick slices.
In a bowl, combine the breadcrumbs and spices. In another bowl, place the flour. In a third, whisk your two eggs together. Set up an assembly line of sorts. Start with flour, egg then breadcrumbs. Dunk the tomato slices in flour, then egg, then breadcrumbs. Be sure to coat them well.
In a saute pan, heat up the oil over medium high. Once it is hot, place the tomato slices in.
Let the slices sit in the oil until they get to be a nice golden brown color. Flip them. Let them get golden brown on the other side then take them out of the oil and let them drain on a paper towel.
Sprinkle them with a little salt and serve.
Oh yum… Golden and fried and tasty.
