I think we could easily spend a small fortune on take out and fast food in this house. It’s not that I don’t love cooking. Obviously I do or what else would I be here for, right? It’s just that by the time Friday evening rolls around, I’m either too worn out or too pumped up to cook. I just want to get something quick and easy.
Enter the take-out fake-out! I love when I find a recipe that is simple, easy and just like the real thing! It is definitely cost-effective and I don’t have to put on sensible shoes to pick it up. All around win, right?
Chicken Lo Mein

Ingredients
- 2 boneless, skinless chicken breasts, cut into bite sized pieces
- 2 Tbsp. olive oil
- 1 Tbsp. fresh ginger, peeled and minced
- 1 clove garlic, minced
- ½ lb. angel hair pasta
- 1 bag frozen stir-fry veggies*
- 2 Tbsp. hoisin sauce
- 2 Tbsp. soy sauce
- ¼ cup chicken broth
- 1 tsp. cornstarch
Instructions
- Cook your pasta in large pot of water according to package instructions.
- In a large sauce pan over medium high heat, pour in one Tbsp. olive oil. Once it heats up, add in the ginger and garlic.
- Let cook for a minute or two until fragrant.
- Add in the stir-fry veggies. Cook 5 to 6 minutes until hot. Put into a bowl and set aside.
- Heat up the second Tbsp. of olive oil. Add in your chicken pieces.
- Cook through until there is no longer any pink.
- Add veggies back into the pan and stir to combine with the chicken.
- In a small bowl, mix hoisin sauce, soy sauce, chicken broth and cornstarch until well combined.
- Add pasta to a large serving bowl. Pour in the veggies, chicken and sauce and toss well to combine.
Notes
*Alternately, you could use fresh, chopped veggies. I was going for ease in this recipe and used frozen.
