Take-Out Fake-Out Chicken Lo Mein

I think we could easily spend a small fortune on take out and fast food in this house. It’s not that I don’t love cooking. Obviously I do or what else would I be here for, right? It’s just that by the time Friday evening rolls around, I’m either too worn out or too pumped up to cook. I just want to get something quick and easy.

Enter the take-out fake-out! I love when I find a recipe that is simple, easy and just like the real thing! It is definitely cost-effective and I don’t have to put on sensible shoes to pick it up. All around win, right?

Chicken Lo Mein

Serves: 6 to 8
 

Ingredients
  • 2 boneless, skinless chicken breasts, cut into bite sized pieces
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh ginger, peeled and minced
  • 1 clove garlic, minced
  • ½ lb. angel hair pasta
  • 1 bag frozen stir-fry veggies*
  • 2 Tbsp. hoisin sauce
  • 2 Tbsp. soy sauce
  • ¼ cup chicken broth
  • 1 tsp. cornstarch

Instructions
  1. Cook your pasta in large pot of water according to package instructions.
  2. In a large sauce pan over medium high heat, pour in one Tbsp. olive oil. Once it heats up, add in the ginger and garlic.
  3. Let cook for a minute or two until fragrant.
  4. Add in the stir-fry veggies. Cook 5 to 6 minutes until hot. Put into a bowl and set aside.
  5. Heat up the second Tbsp. of olive oil. Add in your chicken pieces.
  6. Cook through until there is no longer any pink.
  7. Add veggies back into the pan and stir to combine with the chicken.
  8. In a small bowl, mix hoisin sauce, soy sauce, chicken broth and cornstarch until well combined.
  9. Add pasta to a large serving bowl. Pour in the veggies, chicken and sauce and toss well to combine.

Notes
*Alternately, you could use fresh, chopped veggies. I was going for ease in this recipe and used frozen.
