Easy Pumpkin Butter

Have you ever gotten lost while driving? Not just a little lost, but really lost? In a big city that you aren’t at all familiar with?

I have. Quite recently. Yesterday, in fact. I was headed to a company meeting in Georgetown. And to get to Georgetown, you have to drive through downtown D.C. And through something called Dupont Circle. Before yesterday, I didn’t even know what Dupont Circle was. Now, I never want to see it again. Dupont Circle and I are NOT friends.

I spent almost 2 hours trying to find K Street. I never found it. I missed the meeting. I balled my eyes out while trying to find anything that looked familiar. I realize that some people can get lost and still behave rationally. I am not that person. I am pretty sure everyone that crossed my path though I was insane.

On days like that, you NEED simple things. I couldn’t handle complicated. I still don’t want to handle complicated. So here is some very simple pumpkin butter. It’s a really delicious fall treat. I spread mine on both English muffins and whole wheat toast. It’s quick, it’s easy, it’s not complicated. And it’s so very fallish. There is nothing more comforting on a rotten day than a great fall treat.

Easy Pumpkin Butter

Ingredients
  • 15-oz can pumpkin puree
  • ½ cup or honey
  • ½ tsp Vanilla Extract
  • 1 tsp Cinnamon
  • ¾ tsp Pumpkin Pie Spice
  • Pinch of salt

Instructions
  1. Combine pumpkin, honey and vanilla in a sauce pan over medium-high heat. Mix well to combine.
  2. Stir continuously for 15 minutes until thickened.
  3. Add in cinnamon, pumpkin pie spice and salt and stir well.
  4. Remove from heat and set aside to cool.

Notes
This will keep for about two weeks in the fridge.
