This summer, my garden is actually thriving. And by garden, I mean pots filled with herbs. We are still figuring out the soil here and so pots on the porch won out over an actual garden. regardless, I have more mint on my hands than I can handle. It’s like grey hair. Every sprig I trim yields 5 more. I’m not complaining. I love using the fresh mint as much as possible. My new favorite mint creation is this super simple yet incredibly flavorful blueberry mojito.

The basic formula for a good mojito is simple. Lime, loads of cool mint, simple syrup, light rum and seltzer or lemon-lime soda. Once you master that, you can play around with dozens of different flavors and combinations. In this rendition, I tossed a bunch of blueberries in while cooking up the simple syrup. The blueberries break down into the sugar mixture and give it a sweet, fruity flavor and a vibrant violet color. The lime and mint cut through the sweetness of the syrup so it isn’t overwhelmingly, cavity-causing sweet.

Blueberry Mojitos

Yield: serves 2


  • For blueberry simple syrup:
  • 1 cup sugar
  • 1 cup blueberries
  • 1 cup water
  • For mojito:
  • 2 ounces blueberry simple syrup
  • 2 ounces white rum
  • 4 ounces lemon-lime soda
  • 2 sprigs of mint


  1. For simple syrup, combine all in a sauce pan and bring to a boil. Reduce and simmer for five minutes. Strain.
  2. To make mojitos, combine mint and lime and muddle. Pour into two ice-filled glasses. Combine syrup and rum in a shaker and shake until well mixed. Pour into the glasses. Top with lemon-lime soda.

  1. Oh I love that you posted this! Years ago I had this amazing blueberry mojito at a restaurant … and then the place closed down. Sad face. lol. I just need to make it at home instead!

    • That’s the worst! I feel like that always happens. I had this orange pineapple mango juice when I was a kid in Disney World with my mom and I’ve never seen it again! Hopefully, this mojito at least sort of matches that delicious one you had years ago! :)

    I was just looking at my mint this morning while filling endless pails of water from the rain barrel to water the garden and new perennials. I’d had the thought that I should bring it to the lunch I was hitting and share it with friends, but forgot. I think instead a blueberry-lime-mint concoction is in order.
