Chicken Fajita Egg Rolls with Creamy Avocado Dip

Sometimes, you can’t help but gush about something awesome. And that is how I also feel about these chicken fajita egg rolls. I could try and pretend to have something profound to say about them. I could describe the taste or the texture or act as though I am writing a review about them. Or I can just say they are awesome, no? Because they are pretty awesome. If you love chicken fajitas, then these are totally your thing. And be sure not to skip the avocado dressing. Seriously, it would be bad. Because that is equally as awesome and delicious and creamy. And it’s entire purpose in life is to be slathered onto these chicken fajita egg rolls.

Or anything else you can get your hands on. Because avocados are awesome, no?

Chicken Fajita Egg Rolls with Creamy Avocado Dip

Serves: 4

  • 1 breast of chicken, cooked and shredded
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 tsp. chili powder
  • 1 clove garlic, minced
  • 1½ cups shredded cheddar cheese
  • 15 egg roll wrappers
  • 1 avocado, diced
  • ⅓ cup Greek yogurt
  • salt
  • 1 Tbsp. chopped cilantro
  • up to ½ cup milk
  • oil for frying

  1. Heat ½ Tbsp. oil in a sauce pan over medium heat. Add in peppers, onion and garlic and sautee until soft. Add in chicken and chili powder and toss well to combine. Remove and place into a bowl.
  2. Lay egg roll wrappers on a clean, dry surface in a diagonal pattern. Spoon a generous scoop of chicken mixture into the bottom corner of the wrapper. Add in a bit of cheese.
  3. Roll up the bottom corner of the wrapper. Fold the sides in then continue to roll the wrapper until it is completely closed. Repeat with remaining wrappers.
  4. Heat ½ inch oil in a frying pan over medium heat. Once it is hot, add in egg rolls and fry until golden. Flip and fry until golden on the other side. Remove and drain on a paper towel-lined plate.
  5. To prepare dip, combine avocado, yogurt, salt, cilantro and milk in a blender. Blend until smooth.
  6. Serve egg rolls with avocado dip.
