Coconut Lemonade

It is that time of the week where Friday is at hand and you’re so tired you can almost not think straight. That’s where I am this week. Friday. Coconut lemonade to celebrate for Friday. The end.

Coconut Lemonade

Serves: 6

  • Juice of 6 lemons
  • 8 cups water
  • 1 cup additional water
  • 1 cup sugar
  • 1 cup shredded coconut

  1. Combine coconut, 1 cup water and sugar in a sauce pan and heat over medium high. Heat until boiling then reduce to simmer. Stir until sugar has dissolved. Once sugar has dissolved, pour the mixture through a strainer to remove the coconut.
  2. Combine the simple syrup with lemon juice and water. Refrigerate for at least hour. Serve cold.
