- Juice of 6 lemons
- 8 cups water
- 1 cup additional water
- 1 cup sugar
- 1 cup shredded coconut
- Combine coconut, 1 cup water and sugar in a sauce pan and heat over medium high. Heat until boiling then reduce to simmer. Stir until sugar has dissolved. Once sugar has dissolved, pour the mixture through a strainer to remove the coconut.
- Combine the simple syrup with lemon juice and water. Refrigerate for at least hour. Serve cold.
