Eleven Herb and Spice Mix

When I was younger, I used to die over KFC. I’m not really sure why but the extra crispy just did it for me. When I was in high school working in the mall, I used to grab it to go all the time. It was not great for my figure and once I cut it and most other fast food out, I ended up NOT as a paunchy slob… Although sometimes I think I’m a little happier when paunchy. Except the whole not feeling healthy, inability to fit into clothes parts…

Moving on… I still love the seasoning KFC offers. I think that is really what does it. Yes, the super crispy skin is tasty but really, their spice blend goes a long way. That whole eleven-herb-and-spices thing works. I try to avoid eating fried chicken these days based solely on the fact that I am getting too old to fight with constant weight-loss battles. Instead, I make my own eleven-herb-and-spice blend at home and use it on whatever tickles my fancy. As a rub on grilled chicken, as seasoning for homemade “fried” chicken, or in gravy. Tune in later this week for a new way to use this spice mix but for now, just whip some up at home and reminisce about the days when you used to eat fried chicken by the bucket.

  • 2 Tbsp. paprika
  • 1 Tbsp. onion salt
  • 1 tsp. celery salt
  • 1 tsp. sage
  • 1 tsp. garlic powder
  • 1 tsp. ground allspice
  • 1 tsp. oregano
  • 1 tsp. chili powder
  • 1 tsp. black pepper
  • 1 tsp. basil
  • 1 tsp. salt

  1. Combine all spices in a jar and shake well to combine.
  2. Use 1 to 2 Tbsp. per 1 cup of breading for fried chicken.
