Gouda and Caramelized Onion Grilled Cheese

Gouda is the cheese of all cheeses. Toss it on a slice of bread and load up the onions to make the ultimate: a gooey gouda and caramelized onion grilled cheese.

Remember when Amanda Bynes was all kinds of adorable and we all loved her from the bottom of our hearts? I’m thinking way back before Easy A time. Even before Sydney White. Let’s get a little old school here and think She’s The Man. I’ll admit this – and I’m only half ashamed – but I love that movie. It could be a pre-sexiest man alive Channing Tatum that does it for me. Or a cool soundtrack that I pump loudly every summer. Who the heck knows? But it’s great, I watch it every time it’s on, I’m not sorry.

In it, Amanda Bynes – pretending to be a dude – tries to help Channing Tatum get a girl. Ha! As if he needs help getting a girl. Regardless, she tells him to strike up conversation and just talk about anything. So they start talking about cheese, specifically gouda. And it’s funny and everyone laughs because who would talk about cheese?

I would talk about cheese. Hell, I’d marry cheese if I could. It’d be fairly easy, at least for me, to build a lasting relationship strictly around cheese. What’s not to love? Seriously, that’s a question. Those cheese haters, please speak now. I want to know. Because in my eyes, cheese is a cooler version of bacon. It makes everything better. And I do mean everything.

So I took a giant hunk of gouda and sliced off a tiny bit for this sandwich before stuffing the rest directly into my mouth. I also caramelized a few onions because why the heck not? The result was a gooey, drippy, caramely, cheesy sandwich. It fit the bill on that day, when all I wanted was cheese. And it fits the bill every day, because we should probably be eating cheese every day.

On a serious note, make the caramelized onions. They really make a difference here. If you choose not to, I’d add another type of cheese in here. The gouda is great but it needs a little sharpness. A slice of sharp cheddar would do the trick if you decide to skip the onions.

Gooey Gouda and Caramelized Onion Grilled Cheese

Prep Time: PT15 M

Cook Time: 10 minutes

Yield: serves 2


  • 4 slices thick sourdough bread
  • 4 slices gouda cheese
  • 2 large yellow onions, sliced into rings
  • 3 Tbsp. butter
  • 1 1/2 cups beef stock
  • salt and pepper to taste


  1. Melt 1 tablespoon of butter over medium high in a large sauce pan. Add onions once butter is melted and toss them to coat. Season with salt and pepper.
  2. Add in 1/2 cup stock. Toss onions and cover for 7 minutes until the liquid is absorbed. Stir the onions and cover an additional minute or two if the stock isn't absorbed.
  3. Repeat with the stock in 1/2 cup increments until you have no remaining stock and the onions are caramelized. Remove from heat and set aside.
  4. Butter the slices of bread with the remaining two tablespoons of butter. Heat a griddle to medium high heat.
  5. Place the cheese slices onto the non-butter side of two slices of bread. Top with caramelized onion. Place the remaining slices of bread on top, butter side up.
  6. Place the sandwiches on the griddle and heat until the cheese has begun melting and the bread is golden brown. Flip the sandwich carefully.
  7. Cook the other side until the cheese is fully melted and the other side of bread is golden.

  1. YOU–are a girl after my own heart. I FREAKIN’ LOVE ‘SHE’S THE MAN! I’ve not admitted that in public yet. ‘Til today. I think it was Amanda Bynes best work to date. She peaked during that movie. Just like Lindsay Lohan peaked during “Mean Girls”. Anyway– I’m all about some gouda. And your grilled cheese. Mmm!

  2. hahaha I can’t even tell you how many times my sister and I watched She’s The Man! I totally forgot about that movie! The premise cracks me up now but holy cow did we love that movie!

    And this grilled cheese? Holy yum.

    • I am SO glad that it’s not just me! I have to admit that I watched it just a few weeks ago when it was On Demand. Lame but I still LOVE it! :)
