Italian Sausage with Peppers and Onions

I know that peppers and onions isn’t anything revolutionary. This recipe, however, is unlike any other I’ve had. Forego the traditional pasta sauce and spaghetti. This rendition uses a bit of white wine. The onions and pepper mix with the wine to form a caramel-like sauce that is divine.

  • 5 hot sausage links
  • 2 bell peppers (any color will do)
  • 1 large Vidalia onion
  • 3 garlic cloves, minced
  • ¼ cup white wine
  • 2 Tbsp. butter
  • salt and pepper to taste

  1. Brown the sausage links in a large sauce pan over medium heat. Once browned, remove and set on a plate. Cut into slices.
  2. In the same pan, melt butter. Add onion and garlic and saute 2 minutes until soft. Add pepper and cook 2 minutes.
  3. Add wine and stir well.
  4. Add sausage back to the pan. Reduce heat to low and cover, cooking 15 minutes. Add salt and pepper to taste.
