Mint Mojito Fruit Salad

Berries are so abundant in the summer months, dying to be used. Get a little saucy and give them all the flavors of a refreshing mojito.

Summer calls for fruit salad. Between all the parties, family get togethers and holidays, you’ll need a good fruit salad recipe in your pocket. Sure, there are the standard recipes with grapes and strawberries. Maybe some get a little crazy and add in marshmallows or pudding. But isn’t that sooooo tired? This mint mojito fruit salad is just the ticket for your summer parties (or lazy days at home or by the beach).

I first fell in love with moitos while on my honeymoon in Disney World. After a wild and wet ride on Splash Mountain, Brian and I decided to eat dinner at the first place we came across – The Turf Club in Saratoga Springs. I didn’t expect much from the hotel restaurant but my mind was quickly changed. We were greeted with a phone call from Mickey Mouse, wishing us congratulations on our wedding. We ordered some drinks and dinner. And then it began – the best meal of my life. Pork chops with red onion jam, three cheese casserole and lots and lots of free flowing mojitos. Traditional, passion fruit, mango. I tasted paradise and I was never going back.

These days, I lay off the rum a bit but still enjoy the bright, fresh flavors of a mojito. This fruit salad fulfills all my needs. Four berries, loads of fresh mint and a good squeeze of lime. Perfect for the summer season!

Mint Mojito Fruit Salad

Serving Size: serves 2 to 4

Ingredients

  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup strawberries, hulled and halved
  • 3 sprigs of fresh mint
  • 2 tsp. sugar
  • juice of 1 1/2 limes

Instructions

  1. Combine the berries in a large bowl. Set aside.
  2. In a smaller bowl, combine mint, limes and sugar. Use the back of a spoon to muddle the mixture and release the flavors of the mint.
  3. Pour the mint mixture on top of the fruit and stir well. Refrigerate for at least an hour before serving.

  1. This gives me a great idea! I’ve been making berry salads a few days a week, and I have chocolate mint in my garden, found it at home depot. I don’t know how they can make a plant taste like chocolate, but it’s awesome!

I just started exploring with a DSLR not too long ago and all I am currently shooting is fruit. And I had just been wondering if the photos submitted to Foodgawker (for when I am ready…after a LOT more practice) need to be recipe based.
