Peanut Butter Frosted Brownies
When is the last time you went on a picnic? An honest-to-goodness picnic with a basket, a red checkered blanket and delicious food (plus an ant or two for good measure)? It’s been a long time for me. When the picnic theme was announced for Sunday Supper, I was stoked. Not only would it give me the chance to cook up some great picnic foods, it would also encourage me to get off my butt and actually go on a picnic. And with a beach less than a mile from our house, picnicing in the sand by the water is a must.

I debated about what to share for Sunday Supper. The title implies that I should instantly think supper. Dinner foods. And for a picnic, that has always meant hoagies. Big Italian hoagies with loads of toppings. But instead, I went the dessert route. Because no picnic is complete without dessert. Brownies are ideal as an on-the-go food since they wrap up so easily. But standard brownies are boring. In an effort to jazz mine up a bit, I added a thick layer of peanut butter frosting. It’s sweet, nutty and fabulous. These peanut butter frosted brownies have quickly become a favorite in our place.

Wrap these little babies up, toss them in your basket along with some sandwiches and a few drinks and enjoy!

Peanut Butter Frosted Brownies for #SundaySupper

Yield: approximately 18 brownies


  • For brownies:
  • 4 eggs
  • 1 ¼ cups cocoa
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 Tbsp. vanilla
  • 1 cup butter
  • 2 ¼ cups sugar
  • 1 ½ cups flour
  • For frosting:
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • ¼ cup heavy cream


  1. Preheat oven to 350 degrees and line a 9” x 13” pan with aluminum foil that has been sprayed with non-stick spray.
  2. Crack eggs into a bowl and beat them together with cocoa, salt, baking powder and vanilla.
  3. In a separate bowl, melt the butter. Once melted, add in sugar and stir well.
  4. Mix the sugar into the egg mixture and stir to combine. Add in flour and stir well until no streaks remain.
  5. Pour the brownie batter into the pan and spread to cover.
  6. Bake for 25 minutes until a toothpick comes out clean. Allow to cool completely before frosting and slicing.
  7. Prepare the frosting by combining peanut butter, powdered sugar and cream until well mixed.
  8. Once brownies are completely cool, spread the frosting onto the brownies in an even layer. Slice into squares.

  2. I probably haven’t been on a picnic since I was a little kid, but if I was going to one now and someone brought brownies like these…I’d be a very happy girl :)

  3. Peanut butter and chocolate is such a classic combo and these brownies look fantastic. I especially love the fluffy frosting. Btw, are you from the Philly area? I only ask bc “hoagies”is a term I first heard after moving to the Philly area for college :)
