Poached Egg with Feta and Chives

Yesterday, I was roping into watching a Catfish marathon. I had no real desire but some people in this house expressed a serious need to watch it for some 6 hours straight. I’d seen an episode before but really wasn’t overly interested. After hour 2, however, I was hooked. It’s oddly compelling, watching these people meet for the first time after thinking they are in love with each other. I mean, really?

It’s really easy to think you’re in love with this person you met online. But what happens when you get together in person? What if they have all these really annoying habits that you just can’t stand? For example, what if they leave the lid off the toothpaste every morning? Or what if they really hate reality TV? Are these things that come up when you are chatting online and falling in love? Because let’s be honest, it’s really hard to love someone who doesn’t love reality TV.

Plus, once you get together in person, you need to learn all this additional stuff about them and that could take years! It could take forever to remember what they eat on their Five Guys burger (I still don’t remember that Brian hates cheese on his and it’s been 7 years). Cultivating a relationship online won’t alert you to the fact that the other person may hate spinach. Spending actual face time will. And then you’ll make this for yourself at breakfast time, since you like all of the ingredients involved. Salty feta, garlicky spinach, buttery poached eggs. Your significant other may hate those ingredients but if you’d only been in an online relationship, then you’d never know.

All of that being said, this is a breakfast that I would eat but Brian wouldn’t. He hates eggs. And quite possibly reality tv.

Poached Egg with Feta and Chives

Buttery poached eggs layered on top of garlicky spinach and salty feta.
Ingredients
  • 1 egg, poached
  • 1 pat of butter
  • 1 generous handful of spinach
  • 1 garlic clove, minced
  • 1½ Tbsp. crumbled feta cheese
  • 1 Tbsp. chopped chives

Instructions
  1. Melt the pat of butter in a sauce pan over medium. Once melted, add the garlic and cook until fragrant, about 30 seconds.
  2. Add the spinach. Stir to coat with butter and garlic and allow to wilt, about 1 minute. Remove and place on a place.
  3. Top with a poached egg. Layer on feta and chives.

  2. Yet another hit from Feed Me, Seymour! I sauteed the garlic and spinach in a bit of chicken broth rather than butter to cut back on fat and calories. Chicken broth adds a nice zap of flavor too. Thanks so much for the idea. I really enjoyed this!
