I never realized this until recently but in the mornings, I am in desperate need of fuel. I used to be the type that would shirk off breakfast because it was too time-consuming to make or it was too early to eat. But recently, I’ve been in need of breakfast. If I eat it, I end up being able to go longer without feeling like I need a snack, without feeling tired and without getting grumpy.

Still, I hate taking time on weekday mornings to cook. I need to be out the door quickly to avoid traffic so breakfasts still need to be quick while also flavorful and filling. Lately, I’ve become a huge fan of this oatmeal. I can toss all the ingredients in the slow cooker on Sunday and let it cook low and slow all day. It makes more than enough for the entire week and it’s incredibly filling. A great breakfast that is easily made and tastes good while also filling you up? This fits the bill.

Steel cut oats are slow cooked with apples and cinnamon for a healthy breakfast reminiscent of apple pie.
Ingredients
  • 1 cup steel cut oats
  • 1½ cup 1% milk
  • 1½ cup water
  • 2 Granny Smith apples, peeled, cored and chopped roughly
  • 1 tsp. cinnamon
  • ½ tsp nutmeg
  • 2 Tbsp. brown sugar

Instructions
  1. Combine all ingredients in a slow cooker.
  2. Set to low and cook 6 to 7 hours until oats are cooked through. Stir occasionally.
