Tropical Chia Seed Smoothie

When I was in high school, I used to work at a hair salon in the mall. Let’s not even pretend that I didn’t love that job. I met my best friend in the world while working at that job. She worked at the ice cream stand right across the way and we’d constantly chit-chat when things were slow. We’d eat lots of Taco Bell and drink smoothies from the smoothie stand that opened in the food court.

I won’t lie. When I made this smoothie, it seriously took me back. I’m not usually a smoothie person. Despite the name, they never come off as smooth to me. There’s something always just a little bit chunky or seedy. But this smoothie? It’s smooth. And sweet and creamy. The chia seeds definitely have an odd texture at first so be prepared. You can omit then if you don’t want to give them a whirl, but they definitely give the smoothie some heft. It will totally fill you up.

Tropical Chia Seed Smoothie

A smooth and creamy tropical-flavored smoothie, chock full o’ chia seeds.
  • ¾ cup coconut milk (next to the almond milk)
  • 1 cup frozen mango pieces
  • 1 cup pineapple pieces
  • 1 banana
  • 1 tsp. chia seeds, soaked in water for ten minutes

  1. Combine all ingredients in a blender. Blend on high until smooth. Serve.

  1. Tropical is definitely the way to go when talking about smoothies. I’ve never put chia seeds in my mine though – good call!

    • Friend, you are missing out! You definitely need to toss some chia seeds into your next smoothie! They make it hefty without being heavy. Totally a breakfast smoothie. :)

  2. Yesterday it was your wonderful poached eggs over spinach. Today it’s this smoothie,which is equally fabulous. I used almond milk rather than coconut milk since the grocer was out if the latter. Thanks once again for the wonderful recipe!
